You will remember a dinner at Ember Kitchen & Subterra Agave Bar .

The long-awaited Latin-inspired kitchen and underground cocktail bar, located in the Seaholm District at 800 W. Cesar Chavez St., opened its doors on Wednesday, Feb. 15.

The restaurant is led by Executive Chef Nayely Castillo — an alum of restaurants including Hestia, Birdie’s, and Uchi — whose menu harkens back to their childhood in El Paso.

Dishes like scallops with smoked corn mousse, Salpicon de Pulpo octopus with burned salsa, and a coal-fired seafood tower encapsulates the flavor of live fire. Nixtamalized masa steals the show in caviar bites in masa cups, and in carrot huarache with pine nut mole.

The restaurant accommodates 80 people in the dining room, and 65 in the cocktail lounge.
