Austin Made: How Torchy’s Tacos became a ‘damn good’ staple

The Trailer Park. The Tipsy Chick. The Brushfire. If you have ever been to Torchy’s Tacos, you recognize the names of its signature tacos.

The cheeky local staple has been slinging tacos to Austinites and beyond since opening in 2006 — around 18 years ago.

Fast facts

  • Torchy’s serves a limited-edition “Taco of the Month,” which changes (you guessed it) once a month.
  • You can order your taco “trashy,” which means adding queso, or “classy,” which means adding lettuce.
  • Torchy’s now operates 100+ restaurants in 14 states around the country, including 15 in Austin.
  • The Former Torchy’s CEO listed his Torchy’s-themed mansion for $7.5 million in 2021.

Humble beginnings

The first Torchy’s opened inside a food truck on South First Street. Founder Mike Rypka, a trade chef, would ride around town and deliver tacos on his red Vespa in the early days. Once, while on his deliveries, Rypka said he heard folks say “damn, these tacos are good,” which morphed into the restaurant’s well-known slogan.

Since the beginning, Torchy’s has tapped local artists — like the Blue Genie Art Industries and street artist Sloke One — to help create and expand its distinct branding, complete with its devil baby mascot.

Rypka says, “if you’ve been to one Torchy’s, you’ve been to one Torchy’s,” meaning no two restaurants are the same. Earlier this year, Rypka was named Ernst & Young’s Gulf South Entrepreneur of the Year, and says the company is growing by 10%-15% each year.

In 2020, Torchy’s secured $400 million in funding to grow the chain. The brand is currently undergoing “Project Blue Sky” to optimize the menu and potentially implement robotic help.

Development
  • Austin City Council approved $4.5 million for the Austin Playhouse to construct a new live theater center. The project — which consists of two theaters, rehearsal space, classroom space, and an open-to-the-public facility — is expected to cost $7.5 million. (KXAN)
Civic
  • Austin City Council gave the go-ahead for design work to replace the Barton Springs Road Bridge. The bridge, which was built in 1926, has issues with spalling concrete, cracking, and noncompliance with ADA standards. (KXAN)
Transit
  • CapMetro will expand Pickup, an on-demand transit service, to Dove Springs starting early next year. Pickup works similarly to rideshare apps, allowing users to request a ride within a designated zone, and will begin on Sunday, Jan. 14.
Community
  • Nearly 200,000 Central Texans living just outside of Austin will soon have access to an Austin Public Library card free of charge. An Austin City Council resolution will waive fees on library cards, which are free for residents and $120 annually for non-residents, sometime in March. (Austin Community Impact)
Biz
  • Austin-based Emmer & Rye Hospitality Group is heading south. The company plans to open a 40,000-sqft food collective, called Pullman Market, with four restaurants in San Antonio sometime in the spring. (Eater Austin)
Sports
  • Austin FC acquired winger Jáder Obrian during stage one of the MLS Re-Entry Draft. Obrian, who is originally from Colombia, spent the last three seasons with FC Dallas and has 17 goals and 13 assists in 94 appearances.
Holiday
  • The holiday lights on 37th Street are some of the most dazzling displays in America, according to a report from Thrillist. The lights were called one of the most impressive displays “in all of Texas,” and this year, they feature a Taylor Swift shrine.

Artists to watch: Alejandro Hendricks turned filmmaking from a dream into a reality

For local filmmaker Alejandro Hendricks, making a film comes down to one thing: “seeing (a moment) come to life.”

Hendricks began making short films as early as high school and studied digital media at Texas State University. Now, he works across the country shooting narrative films, music videos, weddings, and documentaries.

We spoke with Hendricks after he presented his work at AfroTech, a traveling tech festival for Black industry professionals.

In connection with his formative era, Hendricks finds most of his inspiration from early 2000s cinema and specializes in Lo-Fi cinematography.

Creating a moment is exactly what Hendricks did in his newest short film, “The Outskirts of Time,” which follows a young couple falling in love and won an award for best actor from the Austin Spotlight Film Festival.
